Fluffy Ham and Cheese Omelet



Wendell likes his omelet with sharp cheddar and onions








John likes his omelet
with Kraft Sandwich
Cheese and ham.



Yes I do spoil My Men, and I LOVE them with all my heart!


For each omelet:
2 eggs
1 Tbsp 1/2 and 1/2 or milk
1/3 cup ham chopped (Divided)
1/2 cup grated cheese of choice, or slices(Divided)
grilled onions, peppers and mushroom slices (optional)
pinch of salt for veggies
1 1/2 Tbsp butter (Divided)
Heat oven to lowest temperature and cut off when it reaches that temp. Place stack of plates in the oven to heat while you prepare the other ingredients.

If you want grilled vegetables:



Chop and saute' vegetables in small amount of butter, and pinch of salt until tender.




Place ham in small frying pan, with small amount of butter (1/2 Tbsp. just to heat through.) (If you cook ham too long it will dry out and get tough.)
I leave the pan on the stove to keep warm.
I divide ham into how many omelets I'm making just before I start my first one.


 In a bowl or measuring  cup whisk eggs and milk until eggs are smooth.
Heat small frying pan, just a little hotter than medium heat. put 1/2 Tablespoon butter in pan to melt. swirl butter making sure sides of the pan are also coated.


Add egg mixture, when it starts to set on the bottom, take spatula and lift around the edges to let uncooked egg under the cooked part. Go all the way around the pan, doing this.




when all the excess egg has gone under to cook, put spatula under the top part of egg and flip.




The pan is still hot. The part that was uncooked will quickly cook. Take the pan off the heat and add 1/2 of the toppings to the omelet.

flip 1/2 of the omelet over and slide off the pan onto a warm plate. (Use a pot holder to remove plate from the oven) top with other half of toppings.
Replace in oven until other omelets are ready to serve.


Serve with: Toast and fruit, picante', sour cream, guacamole,or anything of your choice.
