French Toast

French Toast

Ingredients:
3 large eggs
1 cup milk or half and half
1 tsp. cinnamon
1/2-1 tsp. vanilla
pinch salt
8 piecies sliced bread, Or raisin bread
in a medium bowl, whisk eggs, then add the rest of ingredients, except bread.

Heat a frying pan, on medium heat.
Spray pan with Pam Cooking Spray just before adding bread.

Dip bread on first side, waiting a few seconds before flipping. Don't let soak in the batter.

Transper to frying pan, add one or two more pieces. Cook about 2-3 minutes, until golden, flip.

Continue cooking until second side is golden.
While toast is browning place glass or pottery plates in the microwave and heat 1 minute, to get the chill off.

I love cinnamon, so I add a shake to the egg mixture that is left, before dipping more bread.
This mixture should coat about 8 slices of loaf bread.
If you need more egg mixture
for 1 egg, use 1/3 cup milk, shake of salt, good shake of cinnamon, and a tiny bit of vanilla.

Serve simply with syrup, jelly, jam or fresh fruit compote, or sprinkle powdered sugar over.

This is wonderful with sausage or bacon and fresh fruit.
